Here we will look at green cabbage, red cabbage, Napa cabbage (aka Chinese Cabbage), and Savoy cabbage. There are many other vegetables that are actually in the cabbage family, but will be examined separately these include: bok choy, broccoli, brussels sprouts, cauliflower, kale, and kohlrabi.

 

Cabbage Cooking Method

Cook until desired tenderness

Raw shredded for coleslaw, leaves, juice
Boil

shredded 4 - 7 min. (taste test to find the tender/crispy texture that you prefer
green cabbage wedges 9 - 11 min.; leaves 3 - 4 min.
Red cabbage wedges 9 - 11 min.; leaves 8 - 10 min.
napa or savoy wedges 4 - 6 min.; leaves 2 - 3 min.

Braise shredded braise 10 min. covered then 10 min. uncovered to glaze
Steam green cabbage wedges or shredded 12 - 15 min.; leaves 5 - 7 min.
Red cabbage wedges 15 - 17 min. shredded 8 - 10 min.; leaves 15 min.
Napa or Savoy wedges or shredded 6 - 8 min.; leaves 3 - 5 min.
Stir Fry or Saute shredded cabbage 5 - 7 min.
Microwave

shredded 2 cups 4 min.; 1 lb. 8 - 12 min.; wedges 1 lb. 12 - 14 min.

Pressure Cook

quartered 3 - 4 min.; shredded 1 min.

Test for Doneness: When pierced easily with a thin knife blade or when it is the texture that you desire.

Cabbage Tips And Techniques

Adding an acid such as wine or vinegar to red cabbage recipes keeps the cabbage from turning blue. Overcooking cabbage increases and intensifies the sulfur odor associated with cabbage cooking and can reduce nutrients.
